Commercial kitchen extraction or exhaust is vital to any business that is involved in food preparation and cooking. However, there are several considerations to check into, especially when it comes to health and safety. Here is a look at ventilation options and some of the choices you may have.

The canopy extractor or exhaust system is very common in business cooking situations. Canopies are efficient in removing dangerous fumes, smoke, and gases from cooking areas. They also take grease from the air, to protect against respiratory and fire concerns. The filtration that these systems use depends on the type of cooking that is required for business.

If your business does not require a great deal of cooking, which is less than six hours per day, you may be able to use a mesh filtering system. In a mesh filter, grease is trapped within layers of metal fabric called mesh. However, they are not designed to remove a great deal of grease. As such, mesh filters are not recommended above deep fryers, grills, griddles, and anywhere a lot of frying is being done.

It is not hard to remove mesh filters to clean them. However, they do not last a long time and will need frequent replacement if used regularly. These filters are often cleaned with hot water and strong detergent. They work best in environments with little to no frying.

Commercial kitchen extraction systems most commonly use baffle filters. Baffle filters offer a great deal of efficiency and protection from fire hazards. The system works by taking in grease laden air through baffles. This forces the air to change direction and intensity. As a result, grease is separated from the air and is allowed to drain into a collection system. Clean up is very easy, as the baffles can be placed in dishwashers.

Some types of ventilation systems use cartridges. The cartridges are stainless steel and are not disposable type of units. This kind of system is generally used under heavy conditions as they are more efficient than the baffle system. As with the baffle filters, clean up can be in dishwashers.

Fire safety is a major concern with commercial kitchen applications and environments. This is especially important if there is constant frying and cooking. A fire can easily happen with little notice and can rapidly spread, putting many people in danger. Commercial ventilation should include some type of fire suppression system for placing chemicals on fires automatically. Effective systems need to shut off all of the power to the kitchen, also.

In closing, health and safety are the most important concerns for commercial kitchen extraction systems. Your system should match the type of cooking that is done. Light cooking businesses may be able to use mesh systems. Most systems will employ baffle filtration for efficiency and good service. However, large industrial cooking will require cartridge systems or better to handle the demands of modern day cooking needs in business.
